BIALYS are a golden brown crusted Artisan European roll with a dab of onion in the center best described as "the Best of a Bagel and English muffin combined".

Not newcomers to the business, Hyman (Slim) Schwartzberg's story began when his family emigrated from Bialystok Poland/Russia to America in the early 1900's for a better life. Bringing its namesake bread (THE BIALY) and traditions with them thru the gates of Ellis Island near the steps of the Statue of Liberty.

Our Bialy's are made with the recipe and know-how which has been a tradition in our family since the early 1900's. It is NOT made from "bagel dough" as many imitators unfortunately use. Our Traditional New York style BIALY's are each shaped by hand.
